Roasted Beet Dip

Makes about 1.5 cup

2-3 medium beets (about 12oz)

1 head of garlic

½ cup (50gr) walnuts (I use pecans)

½ cup cilantro

2 tablespoons olive oil

2 teaspoon lemon juice

1 teaspoon cumin

1/2 teaspoon chili powder

½ teaspoon salt

Preheat oven to 425 degrees.

Wrap each beet individually in foil (with skin on).

Cut top of garlic head to expose cloves. Drizzle olive oil on top and wrap in foil.

Put beets and garlic packages in oven for 45 minutes.

Once beets are cooled, trim the top and peel off the skin. Cut beets into pieces.

In food processor, place all ingredients and puree.

Adjust with salt.



Put equal parts of each in a food processor:

  • Ripe Avocados

  • Pecans

  • White raisins

  • Apricots

  • Prunes

  • Orange


Little bit of red onion


Serve with cut-up veggies.
